Review Artikel: Metode Analisis Kontaminasi Aflatoksin Dalam Produk Pangan

Abstrak


Aflatoksin merupakan toksin bersifat karsinogenik yang dihasilkan dari spesies jamur Aspergillus. Toksisitas dari aflatoksin berbahaya bagi kesehatan, dan telah diklasifikasikan oleh International Agency for Research on Cancer (IARC) sebagai senyawa kelompok 1 yang bersifat karsinogenik. Analisis dan penentuan kadarnya dalam pangan menjadi hal yang sangat penting, namun jumlahnya yang sangat sedikit dalam produk pangan menjadi suatu tantangan. Oleh karena itu dibutuhkan metode analisis yang sangat sensitif, spesifik, dan mudah dalam penanganannya. Ulasan yang dibahas memuat beberapa metode yang digunakan untuk analisis aflatoksin. Metode yang digunakan dalam penulisan review artikel ini, yaitu dengan studi literatur dari jurnal ilmiah nasional dan internasional yang dilakukan secara online.  Metode yang sering digunakan dalam analisis aflatoksin diantaranya Kromatografi Lapis Tipis (KLT), Kromatografi Cair Kinerja Tinggi (KCKT), Mass Spectroscopy, dan yang berbasis immunoassay seperti Enzyme-Linked Immunosorbent Assay (ELISA). Dari perbandingan masing-masing metode tersebut, terdapat kelebihan dan kekurangan dalam analisisnya. Untuk mengatasi masalah dari metode sebelumnya, dikembangkan metode pembaruan lain.
