Evaluasi Dampak Program Pendampingan Diversifikasi Diet Berbasis Produk Sampingan Ayam dalam Pencegahan Stunting di Desa Batukaras, Kab. Pangandaran

Abstract


Stunting merupakan masalah kesehatan masyarakat yang berdampak pada pertumbuhan dan perkembangan anak akibat malnutrisi kronis. Penanggulangan stunting memerlukan intervensi gizi yang inovatif, terutama di daerah dengan keterbatasan sumber daya. Penelitian ini mengevaluasi program pendampingan masyarakat selama satu bulan yang bertujuan untuk meningkatkan pemahaman dan keterampilan komunitas dalam memanfaatkan produk sampingan ayam (seperti hati dan kulit ayam) sebagai bagian dari diversifikasi makanan untuk pencegahan stunting. Program ini dilaksanakan di Desa Batukaras, Kabupaten Pangandaran, dengan melibatkan 18 kader PKK sebagai peserta. Dampak program dinilai menggunakan survei pra- dan pasca- pelaksanaan pendampingan yang mengukur perubahan pengetahuan, sikap, dan intensi perilaku terkait penggunaan produk sampingan ayam. Analisis statistik dilakukan dengan t-test berpasangan. Peningkatan signifikan diamati dalam pengetahuan tentang manfaat gizi produk sampingan ayam. Terutama, kesadaran tentang nilai gizi minyak kulit ayam menunjukkan peningkatan yang signifikan (p < 0.05). Meskipun tidak signifikan, skor kekhawatiran terhadap keamanan produk sampingan ayam menurun pasca-intervensi, menunjukkan berkurangnya kekhawatiran responden dalam mengintegrasikan produk seperti hati dan kulit ayam ke dalam makanan anak dan bayi. Perubahan sikap terhadap penggunaan produk sampingan ayam secara moderat positif tetapi tidak berubah menjadi intensi perubahan perilaku yang substansial.
