Analisis Katekin dan Aktivitas Antioksidan Teh Hitam Jenis Mutu Partikel Halus Menggunakan Metode DPPH

Abstract


Teh celup saat ini telah menjadi sebuah kebutuhan harian yang melekat di masyarakat. Bahan baku utama teh celup adalah teh jenis mutu partikel halus. Penelitian ini bertujuan untuk menganalisis kandungan katekin menggunakan KCKT dan aktivitas antioksidan menggunakan metode DPPH pada teh hitam jenis mutu partikel halus. Penelitian ini dibagi menjadi tiga bagian yaitu analisis katekin, pengujian aktivitas antioksidan yang dinyatakan dalam IC50, serta evaluasi kesesuaian mutunya terhadap SNI 1902:2016. Hasil analisis menunjukkan bahwa PF merupakan teh hitam jenis mutu partikel halus dengan kandungan katekin total tertinggi, yaitu 10,17% sedangkan PF II terendah yaitu 3,89%. Uji aktivitas antioksidan menggunakan metode DPPH oleh seduhan teh hitam jenis mutu partikel halus memperlihatkan bahwa aktivitas terbaik ditunjukkan oleh seduhan PF dengan nilai IC50 sebesar 218 µg/mL dan PF II sebagai yang terendah, 309 µg/mL. Hasil evaluasi kesesuaian mutu menyatakan bahwa semua sampel teh yang diuji telah memenuhi syarat untuk ekstrak dalam air, serat kasar, abu total, abu larut air, abut tidak larut asam, dan alkalinitas dalam air. Satu-satunya kriteria yang tidak bisa dipenuhi adalah kadar air, dimana semua sampel yang diuji mempunyai kadar air diatas 7%.
