Effect of Propolis and Ginger Powder Addition on Antioxidant Activities of Black Garlic-Blended with Honey as Instant Drink Powder

Abstrak


Indonesia is a country with high biodiversity and has the potential to produce natural health products that are practical and useful. Black garlic, honey, propolis, and ginger are some of the ingredients with potential antioxidant activity. The purpose of this study was to determine the effect of the addition of propolis and ginger on the antioxidant activity of honey black garlic drink. In the research conducted, it can be seen that the IC50 value of black garlic, honey and ginger drinks is 571.38 ± 15.83 ppm while in black garlic, honey and propolis drinks is 2069.31 ± 316.59 which states that there is an effect on the addition of ginger and propolis on the antioxidant activity of honey black garlic drinks.
